Easy, affordable and delicious!

I recently discovered the endless world of the squash and immediately fell in love. Pick up a sqaush today and try this recipe!

You will need:
1 Sphaghetti Squash
Extra Virgin Olive Oil
Fresh Basil
Freshly graded Parmesan Cheese
1/4 cup water
Salt & Pepper to taste
Crushed Red Pepper if desired

1. Combine EVOO, Basil, Parmesan cheese, salt, pepper and crushed red pepper in large bowl. Set aside.

2. Cut squash in to half lengthwise; remove seeds. Place squash cut side down on a microwave safe plate with 1/4 cup of water. This will help keep the squash moist.  Cover with plastic wrap and cook on high for 10 to 12 mintues or until the skin feels soft to the touch. Let stand covered, for 5 minutes.

3. With a fork "comb" out the strands of squash into bowl with basil, EVOO and cheese and toss together.

4. Serve immediately with a sprinkle of parmesan cheese on top. Bon appetit!

*Try adding some sauteed vegetables, olives and garlic to same recipe above with the other half of squash for another healthy dinner.
